Natural Baked Muesli Recipe

A bowl of muesli is nutritious way to start the day. When mixed with milk, yoghurt and fruit it can make the perfect healthy breakfast to get you up and going for the day. This recipe is packed with energy, fibre, protein and healthy fats and tastes great. Enjoy!

Serving size:

1/2 a cup

Ingredients

  • 6 cups of Jumbo Oats

  • 1 cup rolled oats or buckwheat

  • 1 cup sunflower seeds

  • 1 cup pumpkin kernels

  • 1 ½ cups nuts, chopped (e.g almonds, brazils, walnuts, cashews)

  • ½ cup shredded coconut

  • 2 teaspoons ground cinnamon - optional

  • ¼ cup extra light olive oil - extra light olive oil has a more subtle flavour compared to extra virgin olive oil.

  • ½ cup wheat germ

  • ½ cup ground or whole flaxseed or chia seed

  • ½ cup mixed dried fruit (e.g raisins, sultanas, dried cranberries) - optional

Method

  1. In a large roasting pan combine oats, sunflower seeds, pumpkin kernels, nuts, coconut, and cinnamon, if using.

  2. Mix together and fan bake at 185C for 10 minutes. Remove from the oven and mix well. Bake for a further 5 minutes.  

  3. Check again, stir and put back into the oven for another 5 minutes.Repeat this process every 5 minutes, until the mixture has turned to a light golden colour. Watch carefully so the muesli doesn’t burn careful not to burn.

  4. Take out of the oven, cover and cool.

  5. Allow the muesli to completely cool and stir in wheat germ, flaxseed or chia seeds and dried fruit, if using

  6. Store in an airtight container.

  7. Serve with your favourite yoghurt and fresh fruit.
